Macaroni and cheese!


Macaroni and cheese is the great American snack. It's quick, easy and delicious. I actually just had some Annie's Organic Shells & White Cheddar, and it was excellent. (Note: the photo above is not my macaroni and cheese and certainly not my kitchen!) I also accidentally put about 2 table spoons of organic black pepper. Anyway, for some reason, whenever I make a bowl of organic shells and white cheddar, it comes out brilliantly! I don't know what it is; the pasta is totally al dente, the cheese is nice and perfectly melted, and I always add the perfect amount of butter. Perhaps the trick is that I often substitute water for milk. I know! Some may scoff at this maneuver, but rest assured the macaroni does not come out any less divine! (Actually the reason I don't use milk is because I often don't have any since someone keeps finishing all of it!) If you want to be bold and make your own macaroni and cheese, I found this super easy recipe. I might even try it one day!

First, boil water, then add pasta, then cook pasta, then grate cheese, then drain pasta, then add pat of butter and stir. Next sprinkle pasta with grated cheese. Next add milk. Finally, serve!
Here is how to make your own white sauce!
1 Tbsp. butter1 Tbsp. white flour1/2 to 2 cups milk
Melt butter in small frying pan over medium heat. Add flour and whisk until a smooth paste is formed. Add a tablespoon or so of milk and whisk until smooth. Repeat process until desired consistency is reached. For cheese sauce or as base for soup, this should be somewhere between ketchup and heavy cream. Remove from heat.

  1. I love that you post recipes you haven't made and don't intend to make-- it cracks me up. Will you make me homemade mac and cheese if i bring you aged gouda and entertainment crackers and honey?

  2. I believe that can be arranged. You must make sure to bring the right kind of "entertainment" crackers!

  3. That dish sounds lovely. I shall try and make it one day when I entertain guests. I may even go out on a limb and try it with a camembert or havarti!
